Triple Chocolate Brookie Bites

Rich, fudgy, gooey little bites packed with three kinds of chocolate are the kind of dessert that disappears before the pan even cools. These brookie bites come together with simple pantry staples and zero fancy baking tricks, making them perfect for beginner bakers and chocolate lovers alike.

Ingredients
  

  • 1/2 cup butter
  • 1 cup semi-sweet chocolate chips melted with butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup flour
  • 1/4 cup cocoa powder
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips
  • flaky sea salt for topping

Method
 

  1. Melt the butter and semi-sweet chocolate chips together until smooth.
  2. Whisk in the sugar, eggs, and vanilla extract until fully combined.
  3. Stir in the flour and cocoa powder until no dry streaks remain.
  4. Fold in the milk chocolate chips and white chocolate chips.
  5. Scoop the batter into a muffin tin or onto a baking sheet.
  6. Bake at 350°F for 10–12 minutes until crackly on top and soft in the center.
  7. Drizzle with melted chocolate and sprinkle with flaky sea salt before serving.

Notes

Store the brookie bites in an airtight container in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with cold milk, coffee, or vanilla ice cream for an extra cozy dessert.
