Ingredients
  

  • 1 box vanilla cake mix
  • 3 eggs
  • 1/2 cup oil
  • 1 cup water
  • 1 cup vanilla pudding or pastry cream
  • 1 cup whipped topping or buttercream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Method
 

  1. Mix the vanilla cake mix, eggs, oil, and water until smooth.
  2. Fill a mini muffin pan with the batter.
  3. Bake at 350°F for 10-12 minutes until golden.
  4. Cool the cake bites completely.
  5. Pipe vanilla pudding or pastry cream onto each bite.
  6. Heat the heavy cream.
  7. Pour the heated cream over the semi-sweet chocolate chips.
  8. Stir until the ganache is smooth and glossy.
  9. Spoon ganache over the tops of the bites.
  10. Chill for 15 minutes before serving.

Notes

Store the bites in the refrigerator for up to 3-4 days in an airtight container. Serve chilled with coffee, milk, or fresh fruit for an easy dessert spread.
