1 (6 oz) package stuffing mix

1 1/2 cups boiling water

2 tablespoons unsalted butter

4 boneless skinless chicken breasts (about 2.5 pounds)

1 tablespoon olive oil

1 1/2 teaspoons kosher salt

Fresh cracked black pepper to taste

1 tablespoon brown sugar

1 teaspoon each: dried mustard, garlic powder, onion powder, smoked paprika, dried rosemary, dried oregano

1/2 cup shredded Parmesan cheese


Instructions

Preheat the oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken breasts in a single layer.

2. Prepare the stuffing
In a medium bowl, pour boiling water over the stuffing mix and butter. Stir until the butter melts and the stuffing is well combined. Cover and let it sit for 5 minutes to absorb the liquid.

3. Butterfly the chicken
Slice each chicken breast horizontally to create a deep pocket, being careful not to cut all the way through. This pocket is where all that stuffing magic happens.

4. Season the chicken
Drizzle the chicken with olive oil and rub to coat. In a small bowl, mix salt, pepper, brown sugar, mustard, garlic powder, onion powder, smoked paprika, rosemary, and oregano. Rub this seasoning mixture evenly inside and outside each chicken breast.

5. Add cheese to stuffing
Once the stuffing is fluffy, stir in the shredded Parmesan cheese until well mixed.

6. Stuff the chicken
Spoon the cheesy stuffing into each chicken pocket, dividing the mixture evenly between the breasts.

7. Bake the chicken
Place the stuffed chicken breasts in the prepared baking dish and bake uncovered for 30 minutes, or until the internal temperature reaches 165°F (74°C).

8. Broil for golden finish
Spray the tops with oil and broil for 3–5 minutes to get a beautiful golden crust. Watch carefully to prevent burning.

Notes

Secure the stuffing: If your stuffing is trying to escape, use toothpicks to help keep the pocket closed during baking (just don’t forget to remove them!).
