Description

These Pumpkin Brigadeiros are a fall twist on Brazil’s beloved sweet treat. Creamy, chewy, and rolled in cinnamon sugar—they’re like pumpkin pie in bite-sized form! Perfect for Halloween parties, Thanksgiving dessert trays, or cozy weekend baking.


Ingredients

â–¢ 1 tablespoon unsalted butter

â–¢ 14 oz (1 can) sweetened condensed milk

▢ 1/2 cup pumpkin purée (not pie filling)

â–¢ 1/2 teaspoon pumpkin pie spice

â–¢ 1/4 teaspoon ground cinnamon

â–¢ Pinch of salt

â–¢ 1/2 teaspoon vanilla extract

â–¢ Cinnamon sugar, for rolling (1/4 cup sugar + 1 teaspoon cinnamon)


Instructions

1. In a nonstick saucepan, melt butter over medium-low heat.

2. Add sweetened condensed milk, pumpkin purée, pumpkin pie spice, cinnamon, and salt.

3. Cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, about 12–15 minutes.

4. Remove from heat and stir in vanilla extract.

5. Transfer the mixture to a greased plate or dish. Let cool to room temperature, then chill in the fridge for at least 1 hour.

6. Once chilled, scoop and roll into 1-inch balls.

7. Roll each ball in cinnamon sugar until fully coated.

8. Serve immediately or refrigerate in an airtight container for up to 5 days.

Notes

• Lightly butter your hands before rolling to prevent sticking.

• You can also coat them in crushed graham crackers or shredded coconut for a twist.

• Great for gifting in mini cupcake liners or fall-themed treat bags.
