These Meal Prep Breakfast Burritos are a freezer-friendly, protein-packed way to start your morning right. Fluffy scrambled eggs, savory potatoes, crispy veggies, and melty cheeseโall wrapped in a warm tortilla and ready to grab and go!
Ingredients
โข 8 large eggs
โข 1/4 cup milk (dairy or unsweetened plant-based)
โข Salt & black pepper, to taste
โข 1 tablespoon olive oil or butter
โข 1 cup bell peppers, diced (any color)
โข 1/2 cup red onion, diced
โข 2 cups frozen diced hash browns or roasted potatoes
โข 1 cup shredded cheddar cheese
โข 6โ8 large flour tortillas
โข Optional: salsa, hot sauce, avocado, cooked breakfast sausage or plant-based sausage
Instructions
1. In a large skillet, heat olive oil over medium heat. Add diced peppers and onions. Sautรฉ for 4โ5 minutes until softened.
2. Add hash browns and cook until golden and heated through, about 5โ7 minutes. Transfer to a bowl and set aside.
3. In a medium bowl, whisk eggs, milk, salt, and pepper.
4. In the same skillet, add a bit more oil or butter and scramble eggs over medium-low heat until just set.
5. Assemble burritos: lay out a tortilla, layer eggs, veggie-potato mix, shredded cheese, and any optional fillings.
6. Fold in the sides and roll tightly into a burrito.
7. To freeze: wrap each burrito in foil or parchment, then place in a freezer bag.
8. To reheat: microwave for 2โ3 minutes or toast in a skillet until heated through.
