Ingredients
▢ 2 lbs chuck roast, cut into 1.5-inch cubes
▢ 2 tbsp olive oil
▢ 1 large yellow onion, chopped
▢ 3 garlic cloves, minced
▢ 3 carrots, sliced
▢ 3 celery stalks, sliced
▢ 1.5 lbs baby potatoes, halved
▢ 3 tbsp tomato paste
▢ 4 cups beef broth
▢ 1 cup dry red cooking wine (or additional broth)
▢ 2 tbsp Worcestershire sauce
▢ 1 tsp dried thyme
▢ 1 tsp dried rosemary
▢ 2 bay leaves
▢ Salt and black pepper, to taste
▢ 2 tbsp cornstarch + 2 tbsp cold water (optional, to thicken)
▢ Fresh parsley, chopped (for garnish)
Instructions
1. Season the beef cubes generously with salt and pepper.
2. Heat olive oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned on all sides. Remove and set aside.
3. Add onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes until softened.
4. Stir in tomato paste and cook for 1 minute.
5. Return beef to the pot and add potatoes, beef broth, red wine, Worcestershire sauce, thyme, rosemary, and bay leaves.
6. Bring to a boil, then reduce heat to low, cover, and simmer for 2 to 2.5 hours, until beef is tender.
7. Optional: Stir together cornstarch and water. Add to stew and simmer uncovered for 5–10 minutes to thicken.
8. Remove bay leaves, taste, and adjust seasoning.
9. Garnish with chopped parsley and serve hot with crusty bread.
Notes
You can also make this stew in a slow cooker: cook on LOW for 7–8 hours or HIGH for 4–5 hours.
Chuck roast is ideal for stews—it becomes melt-in-your-mouth tender.
If using wine, go with a dry red like Cabernet or Merlot for deep flavor.
