Description
This Hawaiian Chicken Sheet Pan Dinner is bursting with tropical flavor juicy chicken, sweet pineapple, colorful bell peppers, and red onions all roasted to caramelized perfection on one pan. A quick and easy weeknight meal with minimal cleanup!
Ingredients
▢ 1 ½ lbs boneless, skinless chicken breasts, cut into chunks
▢ 1 red bell pepper, chopped
▢ 1 yellow bell pepper, chopped
▢ 1 red onion, chopped
▢ 2 cups fresh pineapple chunks (or canned, drained)
▢ 2 tablespoons olive oil
▢ 1/3 cup low-sodium soy sauce
▢ 2 tablespoons honey
▢ 1 tablespoon rice vinegar
▢ 2 garlic cloves, minced
▢ 1 teaspoon fresh grated ginger
▢ Salt and black pepper, to taste
▢ Cooked rice, for serving (optional)
▢ Chopped green onions or cilantro, for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, garlic, and ginger to make the marinade.
3. Place chicken pieces in a large bowl and toss with half of the marinade. Let sit while prepping veggies.
4. Arrange chicken, bell peppers, onion, and pineapple chunks on the sheet pan. Drizzle with olive oil and remaining marinade. Toss everything to coat.
5. Spread into a single layer and season with salt and pepper.
6. Roast for 25–30 minutes, stirring halfway, until the chicken is cooked through and the veggies are tender and slightly charred.
7. Serve hot over rice and garnish with green onions or cilantro. So, so good!
Notes
• You can use chicken thighs instead of breasts for a juicier texture.
• For extra caramelization, broil for 2–3 minutes at the end.
