For the Burrito Filling:

  • 1 pound lean ground beef
  • 1 envelope taco seasoning
  • ¼ cup water
  • 15 ounces Rico’s nacho cheese sauce
  • 2 cups prepared Mexican rice
  • 2 tablespoons mayonnaise
  • 1 tablespoon chipotle sauce
  • Sour cream (optional)
  • Tortilla strips
  • For the Burrito Wrap:
  • 4 burrito-size tortillas
  • 2 cups shredded Colby Jack cheese

Instructions

  • Prepare the Beef Filling
    • In a medium skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat. Stir in the taco seasoning and water, then let it simmer for about 5 minutes until the sauce slightly thickens.
  • Mix the Chipotle Mayo
    • In a small bowl, mix the mayonnaise and chipotle sauce until smooth. This creamy, smoky sauce adds a bold kick to your burrito!
  • Assemble the Burritos
    • Lay out each tortilla. Spread a generous amount of nacho cheese sauce in the center. Add ¼ of the seasoned ground beef and ½ cup of Mexican rice. Drizzle with chipotle mayo and add sour cream (if using). Sprinkle tortilla strips for an extra crunch.
  • Fold the Burritos
    • Fold the sides of the tortilla inward. Roll it up tightly from the bottom, securing all the fillings inside.
  • Grill the Burritos with Cheese
    • Heat a non-stick skillet over medium heat. Sprinkle ¼ cup of shredded Colby Jack cheese directly onto the pan. Place the burrito seam-side down on top of the cheese. Cook until the cheese melts and forms a golden crust. Flip the burrito, add another ¼ cup of cheese, and repeat on the other side. Remove and set aside. Repeat for the remaining burritos.
