Ingredients
โข 1ยฝ pounds boneless, skinless chicken breasts or thighs, sliced
โข 2 tablespoons olive oil
โข 1 red bell pepper, sliced
โข 1 yellow bell pepper, sliced
โข 1 green bell pepper, sliced
โข 1 medium red onion, sliced
โข Juice of 1 lime
โข 2 teaspoons chili powder
โข 1 teaspoon ground cumin
โข 1 teaspoon smoked paprika
โข ยฝ teaspoon garlic powder
โข ยฝ teaspoon onion powder
โข ยฝ teaspoon salt
โข ยผ teaspoon black pepper
Instructions
1. In a large bowl, combine olive oil, lime juice, and all spices. Add sliced chicken and toss to coat evenly.
2. Let marinate for at least 15 minutes (or up to 4 hours for extra flavor).
3. Heat a large skillet over medium-high heat. Add chicken and cook 5โ6 minutes until browned and cooked through. Remove from skillet and set aside.
4. In the same skillet, add bell peppers and onions. Sautรฉ for 5โ7 minutes until tender-crisp.
5. Return chicken to skillet, toss everything together, and cook 1 more minute to heat through.
6. Serve hot in tortillas, over rice, or with salad.
