Ingredients
For the Chicken Pot Pie Filling:
4 cups shredded chicken, (about 1 rotisserie chicken pulled)
2 cups celery, chopped
2 cups carrots, chopped
1 yellow onion, chopped
3 tablespoons butter
¼ cup flour
2 teaspoons poultry seasoning
2 cups chicken broth
1 cup heavy cream
For the Cheddar Bay Biscuit Topping:
1 box Cheddar Bay Biscuit Mix, (11.36 ounce) about 2¼ cup mix
3/4 cup milk
1/2 cup shredded sharp cheddar cheese
1/4 cup butter, melted
Instructions
Preheat the Oven
Preheat your oven to 375°F to get everything ready for baking.Prepare Biscuit Dough
In a bowl, combine the Cheddar Bay Biscuit Mix with milk and shredded cheese. Stir until just combined — don’t overmix! Set aside the seasoning packet.Cook the Vegetables
Heat butter in a large skillet over medium heat. Add chopped celery, carrots, and onion. Sauté for 4–5 minutes until softened.Add Flour & Seasoning
Sprinkle flour and poultry seasoning over the veggies. Stir and cook for about 1 minute until thick and paste-like.Make the Creamy Sauce
Gradually pour in chicken broth and heavy cream. Bring to a simmer and stir for 2–3 minutes, until the mixture thickens.Add the Chicken
Stir in the shredded chicken and mix well. Let everything warm through.Transfer to Baking Dish
If your skillet isn’t oven-safe, transfer the filling to a casserole dish.Top with Biscuit Dough
Drop the biscuit dough in heaping spoonfuls over the filling.Bake
Bake for 14–18 minutes, or until the biscuits are golden and the filling is bubbly.Add Buttery Topping
Melt the remaining butter and stir in the reserved seasoning packet. Brush over the baked biscuits for extra flavor.
Notes
You can substitute the heavy cream with half-and-half for a lighter version.
Leftover turkey works great in place of chicken, especially around the holidays.
Frozen mixed vegetables can be used instead of fresh for added convenience.
