Description
Creamy Tuscan Chicken is the ultimate one-pan dinner! Juicy pan-seared chicken breasts simmered in a creamy garlic parmesan sauce with sun-dried tomatoes and fresh spinach. So comforting and full of flavor.
Ingredients
โข 4 boneless, skinless chicken breasts
โข Salt and pepper, to taste
โข 1 teaspoon Italian seasoning
โข 2 tablespoons olive oil
โข 3 cloves garlic, minced
โข 1 cup heavy cream
โข 1/2 cup chicken broth
โข 1/2 cup grated parmesan cheese
โข 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
โข 1 1/2 cups fresh baby spinach
โข Optional: red pepper flakes, for a touch of heat
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5โ7 minutes per side, until golden brown and cooked through. Remove and set aside.
3. In the same skillet, add minced garlic and sautรฉ for 30 seconds until fragrant.
4. Pour in the chicken broth and scrape up the brown bits from the bottom of the pan. Add heavy cream and bring to a simmer.
5. Stir in parmesan cheese until melted and smooth.
6. Add sun-dried tomatoes and spinach. Cook until spinach is wilted, about 2โ3 minutes.
7. Return the chicken to the pan and spoon the sauce over the top. Simmer for another 2โ3 minutes to reheat the chicken and meld the flavors.
8. Serve hot over mashed potatoes, pasta, or rice.
