Description

This chicken thigh crockpot recipe is easy, flavorful, and perfect for busy weeknights. Juicy chicken slow-cooked in a savory garlic-soy-honey sauce creates a comforting dish with minimal effort. Just toss everything in the slow cooker and come home to a delicious, ready-to-serve meal the whole family will love.

Ingredients

Scale

6 boneless, skinless chicken thighs

1/2 cup low-sodium chicken broth

1/3 cup soy sauce

1/4 cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and black pepper, to taste

Fresh parsley, chopped (optional, for garnish)

Instructions

  • Season the Chicken
Pat the chicken thighs dry and season both sides with salt, black pepper, dried thyme, and paprika for a well-rounded flavor base.

  • Mix the Sauce
In a medium bowl, whisk together chicken broth, soy sauce, honey, olive oil, and minced garlic until well combined.

  • Assemble in the Crockpot
Place the seasoned chicken thighs in the bottom of your slow cooker. Pour the sauce mixture evenly over the chicken.

  • Cook Low and Slow
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.

  • Serve and Garnish
Spoon some of the flavorful sauce over the chicken before serving. Sprinkle with chopped parsley for a fresh finish.

Notes

Thighs vs. Breasts: Chicken thighs are best here because they stay moist. You can substitute chicken breasts, but keep an eye on cook time to avoid dryness.

Sauce Thickener Tip: Want a thicker sauce? Remove the chicken and stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water), then simmer the sauce on the stove for 5–7 minutes.

Storage: Leftovers keep well in the fridge for 3–4 days or can be frozen for up to 3 months. Reheat gently on the stovetop or microwave.

Serving Ideas: This dish is great over white or brown rice, mashed potatoes, or steamed veggies. It also makes a tasty shredded chicken filling for wraps or sandwiches.
