2 chicken breasts cut in half lengthwise

1/2 teaspoon garlic powder

Salt & pepper to taste

1 tablespoon olive oil

2 tablespoons butter divided

1 medium onion sliced

1 clove garlic minced

1/2 cup chicken broth

1 teaspoon Worcestershire sauce

1 cup sour cream full-fat

Fresh chopped parsley optional, to taste


Instructions

  • Prep the Chicken
    Cut chicken breasts in half lengthwise to make 4 thinner pieces. Season both sides with garlic powder, salt, and pepper.

  • Sear the Chicken
    Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add chicken and cook for about 5–6 minutes per side, or until golden and cooked through (internal temp 165°F). Transfer chicken to a plate.

  • Caramelize the Onions
    Reduce heat to medium. Add remaining butter and sliced onion to the skillet. Cook for 10–15 minutes, stirring occasionally, until onions are softened and browned. Lower heat if onions start to burn.

  • Add Garlic and Deglaze
    Stir in minced garlic and cook for 30 seconds. Pour in chicken broth and Worcestershire sauce, scraping up any brown bits from the pan for extra flavor.

  • Make the Creamy Sauce
    Stir in sour cream until smooth. Let the sauce warm through for a couple of minutes—don’t let it boil to avoid curdling.

  • Return Chicken and Finish
    Add chicken back to the skillet. Spoon sauce over each piece and let it heat for another 2–3 minutes. Garnish with fresh parsley if desired, and serve immediately.

Notes

Use full-fat sour cream to prevent curdling and keep the sauce rich.

Don’t skip the onion caramelization—it brings out deep, sweet flavors that make the sauce irresistible.

If reheating leftovers, warm gently over low heat and add a splash of chicken broth to loosen the sauce.
