Ingredients
Scale
- 2 cups cooked chicken, shredded or diced
- 4 cups fresh spinach, chopped
- 1 cup cooked quinoa or rice
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup sour cream
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Ingredients: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish. In a large mixing bowl, combine the cooked chicken, chopped spinach, cooked quinoa or rice, chopped onion, minced garlic, shredded mozzarella cheese, and grated Parmesan cheese. Mix until well combined.
- Mix the Creamy Sauce: In a separate bowl, mix together the sour cream, condensed cream of chicken soup, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
- Combine and Bake: Pour the creamy mixture over the chicken and spinach mixture, and stir until everything is evenly coated. Transfer the mixture to the prepared baking dish and spread it out evenly. Cover the dish with aluminum foil and bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted.
- Finish Baking: Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and bubbly. Allow the casserole to cool for a few minutes before serving.
- Serve: Garnish with fresh parsley if desired, and serve hot. Enjoy!
