This Beef Taco Skillet is the ultimate one-pan weeknight dinner—flavor-packed ground beef, tender rice, and melty cheese with all your favorite taco fixings. Ready in under 30 minutes!
Ingredients
▢ 1 lb ground beef
▢ 1 tablespoon olive oil (if needed)
▢ 1 small yellow onion, diced
▢ 2 cloves garlic, minced
▢ 1 packet taco seasoning (or 2 tbsp homemade)
▢ 1 cup uncooked white rice
▢ 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
▢ 2½ cups beef broth
▢ 1 cup canned black beans, drained and rinsed
▢ 1½ cups shredded cheddar cheese
▢ Salt and pepper, to taste
▢ Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced avocado
Instructions
1. In a large oven-safe skillet, heat olive oil over medium heat (if needed). Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
2. Add diced onion and garlic. Cook for 2-3 minutes until softened.
3. Stir in taco seasoning and cook for 1 minute to toast the spices.
4. Add rice, diced tomatoes with green chilies, beef broth, and black beans. Stir well.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, until rice is tender and liquid is absorbed.
6. Remove lid, sprinkle shredded cheese over the top, and cover again for 2-3 minutes to melt.
7. Top with your favorite taco toppings and serve hot straight from the skillet!
