These BBQ Meatloaf Muffins are a fun and flavorful twist on traditional meatloaf. Perfectly portioned, topped with tangy BBQ sauce, and ideal for quick dinners or meal prep.
Ingredients
▢ 1 lb ground beef
▢ 1/2 lb ground turkey (optional for lighter texture)
▢ 1 cup breadcrumbs
▢ 1/2 cup milk
▢ 1 large egg
▢ 1/2 cup finely chopped onion
▢ 2 cloves garlic, minced
▢ 1 tablespoon Worcestershire sauce
▢ 1 teaspoon salt
▢ 1/2 teaspoon black pepper
▢ 1 teaspoon dried Italian herbs
▢ 1/2 cup BBQ sauce, divided
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
2. In a large bowl, combine beef, turkey, breadcrumbs, milk, egg, onion, garlic, Worcestershire, salt, pepper, and herbs. Mix until just combined.
3. Divide the meat mixture evenly into muffin cups, pressing down slightly to shape.
4. Top each meatloaf muffin with a spoonful of BBQ sauce (reserve half for later).
5. Bake for 20–25 minutes or until cooked through and internal temp reaches 165°F (74°C).
6. Remove from oven, brush with remaining BBQ sauce, and return to oven for 3–5 minutes to caramelize.
7. Let cool slightly before serving. Garnish with fresh parsley if desired.
