Ingredients
โข 2 (14 oz) cans jackfruit in brine or water, drained and rinsed

Instructions
1. Drain and rinse the canned jackfruit thoroughly. Squeeze out excess moisture using your hands or a clean towel.
2. Add the jackfruit to a food processor. Pulse a few times until it reaches a stringy, pulled texture.
3. Transfer to a mixing bowl and sprinkle with vital wheat gluten.
4. Use your hands to knead the mixture for 2โ3 minutes until a cohesive, elastic dough forms.
5. Divide into 4 portions. Shape each into a log or cutlet.
