These 15-Minute Vegan Garlic Noodles are the ultimate quick dinner! Rich with garlicky umami flavor, a touch of sweetness, and silky noodles—this is the perfect weeknight go-to.
Ingredients
▢ 8 oz linguine or spaghetti
▢ 1 tablespoon toasted sesame oil
▢ 1 tablespoon olive oil
▢ 6 cloves garlic, minced
▢ 3 tablespoons soy sauce or tamari
▢ 1 tablespoon maple syrup
▢ 1 tablespoon rice vinegar
▢ 2 tablespoons vegan butter
▢ 2 green onions, sliced
▢ 1 tablespoon sesame seeds
▢ Salt, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve ½ cup of pasta water, then drain.
2. Meanwhile, heat sesame oil and olive oil in a large skillet over medium-low heat. Add garlic and sauté for 60–90 seconds, just until golden.
3. Lower the heat and whisk in soy sauce, maple syrup, and rice vinegar. Let simmer briefly.
4. Add drained pasta and vegan butter. Toss to coat in the sauce. Use reserved pasta water to loosen if needed.
5. Serve immediately, garnished with green onions and sesame seeds.
Notes
Best enjoyed fresh, but leftovers keep well in the fridge for up to 2 days.
Add sautéed mushrooms, baby spinach, or tofu to make it heartier.
Use gluten-free pasta and tamari for a gluten-free version.
