Ingredients
▢ 8 oz linguine or spaghetti
▢ 1 lb large shrimp, peeled and deveined
▢ 3 tablespoons olive oil
▢ 4 cloves garlic, minced
▢ ½ teaspoon red pepper flakes (optional)
▢ Zest and juice of 1 lemon
▢ Salt and black pepper, to taste
▢ 2 tablespoons fresh parsley, chopped
▢ Freshly grated Parmesan (optional)
Instructions
1. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
2. Meanwhile, heat olive oil in a large skillet over medium heat.
3. Add garlic and red pepper flakes (if using); sauté for 30 seconds until fragrant.
4. Add shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque.
5. Add cooked pasta to the skillet. Toss with lemon zest, lemon juice, and reserved pasta water as needed to loosen.
6. Season with salt and pepper. Stir in chopped parsley.
7. Serve hot, topped with Parmesan if desired.
Notes
Use fresh or frozen shrimp—just thaw completely and pat dry before cooking.
